Eating lunch at the office has definitely made me more conscious about how healthy I should be eating. Now, my coworkers don’t tell or encourage me to eat healthier, I just do it myself. Apparently, this happened to everyone who started working here. I mean, just last week, I ate salads three times in one week! That has never happened before…

001 chipotle inspired salad with steakI’m a big fan of Chipotle, so when I stumbled upon this Chipotle inspired salad with steak, I knew I had to share! With ingredients that are similar to the ones you’d find at Chipotle, this recipe from Bake and Baste will take 20 minutes to feed up to three people! It’s a low carb meal with delicious steak.

002 paleo chinese chicken saladLike I mentioned before, I love Asian-inspired salads. This paleo Chinese chicken salad is easy to put together, healthy, and tastes awesome. Linda from Linda Wagner writes that the best way to lose some weight is to cut out on carbohydrates. Since summer is here, you can lose water weight by indulging on low carb meals like salads. Besides being low carb, this salad is also gluten free, dairy free, low sugar, and low fat.

003 spicy shrimp and avocado saladThis spicy shrimp and avocado salad is a little different because it is a cold salad with hot toppings. With the Sriracha shrimp combined with cold avocados, this salad will be a party in your mouth! This salad featured on Dine and Dish also doesn’t require dressing because you already have a bunch of different textures going on.

004 hawaiian style macaroni saladAnetta from The Wanderlust KitchenΒ was motivated to make a delicious Hawaiian style macaroni salad because her husband constantly mentioned the best mac salad he’s ever had near his college campus. She read in a magazine that the trick is to toss the hot cooked macaroni with vinegar before letting it sit and cool down. Try it and let me know if it really does work!

I’m not too crafty when it comes to cooking (I know, I know, salads are way easier to make than other dishes), so I take the easy way and just buy salads from Trader Joe’s. At $4 a box, they’re pretty delicious and tasty! πŸ™‚

    I’m just discovering TJ salads! I loved the broccoli and kale one but I think I’m over it now…

    Maybe it’s time to redo my salad post myself!
